This crystal-like rock sugar is the direct product of slow-heating and drying sugarcane juice in the process of making sugar. It retains in its taste some of the mild freshness that characterises sugarcane juice.


With a highly crystalline structure and an excelent melt point alike, this sugar is a favourite of chefs and bartenders. From crushing lime for cocktails, to making a delicious syrup, this sugar is incredibly versatile.


It is also sources from sustainable sources in Central Java, and processed by hand by a small cooperative of farmers.
